*PINEAPPLE-CAKE-WITH-CREAM-CHEESE-FROSTING*



Mashed pineapple cake is filled with delicious pineapple and topped with cream cheese frosting. It's like summer on a plate! Plus, it's very easy to make using just a few simple ingredients.

*ingredients *

° 2 cups all-purpose flour
° 1 1/2 cups sugar
° 2 teaspoons of baking soda
° 2 large eggs, scrambled
° 3 (8 ounce) cans crushed pineapple with juice (reserve 3 tablespoons juice)
° 1 teaspoon vanilla
° 1 cup chopped pecans
° 1 c coconut flakes
° 1 (8 ounce) package soft cream cheese
° 1/2 cup soft butter
° 2 cups powdered sugar

* directions :

Preheat oven 350 degres. Grease a 9" x 13" baking tray.
Whisk the flour, sugar and baking soda. Add beaten eggs, crushed pineapple (reserving 3 tablespoons of juice), vanilla extract and walnuts. Mix until combined and pour into the baking tray. Baking for 35-40 minutes  Let the cake cool completely for a few hours before decorating it with icing.
Preheat oven 325 degres.Spread the sweet coconut thinly on the baking sheet. Bake for 8-10 minutes or until light brown; Flip halfway.Use a blender to blend the cream cheese, butter, and remaining pineapple juice until smooth and creamy. Add powdered sugar 1/2 cup at a time; Scrape the sides.Put a completely cooled cake on top. Sprinkle toasted coconut on top.
