CALIFORNIA SPAGHETTI SALAD


This recipe is from Milk Calendar 2007.This is California Chicken-Pasta Salad recipe.

* Ingredients :

° 8 ounces (250 g) about 2 1/2 cups (625 ml) cavatappi, fusilli, farfalle, or other short pasta
° 3 c (750 ml) cubed cook chicken
° 1 c  red grapes halved
° 1 c (250 ml) chop celery
° 1/4 c (60 ml) chop red onion
° 1 cup (250 ml) Canadian havarti crumbled or grated Canadian colby or Canadian gouda
° Salt and pepper to taste
° 1/4 cup (60 ml) toasted walnuts or coarsely chopped almonds

° 1 cup (250 ml) milk
° 1 clove minced garlic
° 2 tbsp. (30 ml) liquid honey
° 1 c. (15 ml) Dijon mustard
° 1/2 tsp. (2 ml) salt
° 1/4 tsp. (1 ml) dried thyme
° 1/4 tsp. (1 ml) dried rosemary
° 1/4 cup (60 ml) fresh lemon juice
° 1/4 cup (60 ml) plain yogurt

* Preparation

In a large bowl, combine milk, garlic, honey, mustard, salt, thyme, and rosemary. Gradually add lemon juice. Leave for 10 minutes or until slightly thickened. Whisk in the yogurt.
+Salad
In a large saucepan, cook pasta according to package directions until cooked through; Drain them well. Rinse with cold water until cool. drain well.
Add chicken, raisins, celery, onion and cheese to the sauce and toss gently. Season with salt and pepper. Sprinkle with nuts.
