*CHICKEN & SPINACH-PASTA*


**Ingredients :

° 8 ounces uncooked rigatoni (use Dreamfields to reduce carbs!!)
° 1 ton olive oil
° 1 cup chopped onion
° 1 package (10 ounces) frozen spinach, thawed
° 3 c cooked cubed chicken breast
° 1 (14 ounce) can Italian-style diced tomatoes, undrained
° 1 package (8 ounces) Philadelphia chives and cream cheese
° Half salt and half pepper
° 1½ g shredded mozzarella cheese

* Directions : 

Prepare rigatoni according to pkg directions. Spread oil on bottom of 11 x 7 in baking dish; Add onions in one layer. Bake at 375 for 15 minutes or until set. Transfer the onions to a large bowl and set aside.
Drain the chopped spinach well, pressing between paper towels. Add the rigatoni, spinach, chicken, and the next four ingredients to the onions in a bowl. Pour the mixture into the dish and sprinkle evenly with the shredded mozzarella cheese. Bake covered at 375 for 30 minutes; Uncover and bake another 15 minutes or until bubbly.
