This light and fluffy spinach pie recipe is  slight variation on the traditional quiche with pork, but it's the perfect vegan swap

* Ingredients :

° 1/2 cup light mayonnaise
° 1/2 cup milk
° 4 eggs, lightly beaten
° 8 ounces reduced-fat shredded cheddar cheese
° 1 package (10 ounces) frozen shredded spinach, thawed and pressed to dry
° 1/4 cup chopped onion
° 1 pie crust, uncovered (9 inches)

* Directions :

Heat the oven to 200°C. Covering cookie-sheet-with tin foil.
In  bowl, beat jointly mayonnaise also milk to smooth. Whisk in eggs. Layer spinach, cheese, and onions in a pie crust, making several layers of each. Pour in egg mixture. Place the quiche on the prepared cookie sheet. Cover the quiche with foil.
Baking in  preheated oven about 45 min . Removing lid, & baking about 10 to 15 min, or to golden brown & filling is set.
