This low-carb meat stuffed pepper recipe makes for a delicious keto meal. It can also be prepared in advance and frozen for an easy meal anytime.

* Ingredients : 

° 6-8 green, orange or yellow peppers
° 1-2 pounds of ground beef
° 1 medium white onion, chopped
° 1 large can of tomatoes, cut into cubes
° 2 pieces garlic, minced
° 1 cup cheddar cheese
° Salt and pepper to taste

* Prepare :

Preheat the oven to 350 degrees Fahrenheit.
Cut off the heads of the peppers and remove all the seeds and white stuff.
Simmer the peppers in boiling water for 5 minutes
Heat olive oil in  skillet on heat. Stir in onion, garlic and tomato cubes and saute for 3 minutes. Stir in minced meat.
Cook the meat until the pink color fades.
Stuff the mixture into the hollowed pepper. Put the stuffed peppers on the baking tray
Bake in a preheated oven for 12-15 minutes. Top with cheddar cheese and bake for an additional 5 minutes.
