I've been craving egg rolls since I dined at PF Chang's in February with a group of friends.

* Ingredients :

° 12 egg rolls
° 2 1/4 cups fresh peaches 3 peaches
° 1/4 cup granulated white sugar
° 1/4 cup water
° 1 tablespoon cornstarch
° 2 teaspoons lemon juice
° 1/2 teaspoon vanilla extract
° 1 scrambled egg
° 2 tablespoons melted butter
° 1/2 cup brown sugar
° 1 tablespoon ground cinnamon
  Homemade vanilla ice cream ingredients
° 1 cup confectioners' sugar
° 2 tablespoons milk
° 1/2 teaspoon vanilla extract

peeling fresh peaches. On a cutting board, cuttig peaches to slices & cut them into cube.
In  bowl, adding cornstarch also water. Mixing it with an electric beater to break up any lumps.
Then, in a saucepan over medium heat, add the peach cubes, white sugar and water mixed with the cornstarch and lemon juice. Stirring  and cook until peach mix thickens and bubbles. Remove to  heat & adding vanilla extract.
Beat your egg in  bowl.
Next, melt butter in microwavesafe bowl.
In a separate bowl, prepare the cinnamon sugar by adding the brown sugar and cinnamon to the bowl and mixing them well.
Prepare the egg rolls. Adding 2 tsp of peach mixture to one egg roll in center. Brushing corners of egg rolls with beaten egg to making sure egg roll seal well. Fold egg rolls accorde to instructions on package.
Next, dip finished egg rolls in melt butter first. Then direclty roll in sugar-cinnamon mix making sure to covering it totally.
Placing peach egg rolls on parchment paper lined baking-sheet.
Bake in preheated 400 ° F oven for 20 minutes or until golden brown, flipping halfway through cooking.
Adding vanilla cream & powder sugar, if wanted .
How to make homemade vanilla ice cream
In a saucepan over medium heat, mix sugar, milk, and vanilla extract.
Stir for 1-2 minutes or until well blended.
Sprinkle homemade vanilla cream over peach cobbler egg rolls.
