Oven Fried Chicken

*Preparation steps


Preheat oven 7/8 (200°C).
Rub the chicken with fluorine and pepper and tie it up.
Put the chicken in a dish, sprinkle with olive oil and put it in the oven.
After 15 minutes, reduce the oven to heat 6 (180 ° C) and cook for 1 hour.
Meanwhile, prepare the fried potatoes. Peel the potatoes and cut them into very regular sticks, about 1 cm apart. Rinse them well under running water to remove the starch, then dry them very gently with a cloth.
Heat frying oil to 170°C. Simmer the potatoes in small amounts for about 8 minutes, then set aside on a plate. Let it cool completely (let it sit for at least 30 minutes).
Heat the frying oil again to 190°C. Continue to the second cooking bath for the fries, always in small quantities: they should brown well. Wait 5 to 6 minutes.
Drain the potatoes well and dry them by patting them on paper towels. Salt them immediately and serve immediately with chicken cut into pieces.
