Squash Casserole Southern

I realize the last time I ate brunch was this past March, and the idea didn't cross my mind until recently. It is as if it is summer to go to lunch on the terrace of a restaurant where you are served. (By the way, a really cool place to go for lunch on the South Beach is the Péché Matinal on Rue St-Charles in Vieux-Longueuil. I mean it like that.)

*ingredients :

°2 C butternut squash, cut to cubes
°2 cups small potatoes, cut into halves
°1 cup yellow onion cut into cubes
°olive oil spray
°Salt & pepper to taste
°2 cups of shredded cheese of your choice
°sausage meat
°olive oil spray
°6 Italian sausages
°1/4 to 1/2 cup jar 15% or 35% cream to taste
°2 tbsp. Homemade pesto or store-bought

* Steps :

Heat the oven to 400 degrees Fahrenheit.
In a large baking dish, combine squash, potatoes, onions, oil, fleur de sel and pepper. Bake for 30 to 40 minutes, or until vegetables are tender.
Meanwhile, heat a little olive oil in a frying pan, and fry the sausage meat until well browned.
Add cream and pesto, mix well, then pour over the vegetables.
Cover with cheese, then bake again until nicely browned.
