Blueberry-Lemon-Muffins




* ingredients:

° 1 1/2 c fresh or frozen blueberrie
° 2 cups plus 3 tablespoons flour, divided
° 1 teaspoon baking powder
° Half a teaspoon of salt
° ½ cup unsalted butter, room temperature
°2 eggs
° 1 cup sugar
° 1 tablespoon lemon extract
° 7 tablespoons of milk
° 1 tablespoon lemon peel

° Half a cup of sugar
° 2 tablespoons of flour
° Half a cup of brown sugar
° 2 tablespoons melted butter

* instructions :

The first step:
Preheat oven to 350*
Put the paper muffin cups in a baking tray
The second step:
Mix the streusel together in a small bowl
In another small bowl, mix the blueberries with 2 tablespoons of flour, stirring until the blueberries are coated, then remove with a perforated spoon to get rid of excess flour. 
Third step:
In a medium sized bowl, mix the flour, baking powder, and salt
In a large bowl, mix together butter and sugar until mixture is fluffy, then add eggs, vanilla, milk, lemon extract, and lemon peel.
Using an electric mixer, mix well
The fourth step:
Add the flour until the mixture is homogeneous
Gently fold in blueberries
Fifth step:
Fill each muffin cup full
Sprinkle each muffin with about 1 tablespoon of the streusel layer
Bake for 20 to 25 minutes, until golden brown
Sixth step:
Test it with a toothpick in the middle, if it comes out clean it's done.
Seventh step:
Allow it to cool for a few minutes before removing it and placing it on the cooling rack
Serve immediately, or store tightly covered on the counter
