Cowboy Meat and Potato Casserole


° ½ cup minced onion
° ½ cup dried breadcrumbs
° 1 pound lean ground beef
° Half a cup of barbecue sauce of your choice
° 2 teaspoons hot pepper powder
° Half a teaspoon of salt
° 1 scrambled egg
° potato
° 1 package of instant butter flavor mashed potato mix
° Half a cup of evaporated milk
° 1 tablespoon chopped parsley
° 1 tablespoon of butter
° 1 teaspoon garlic powder
° 1 cup cooked and crumbled bacon
° ½ cup crunchy fried onions
° ½ cup shredded Monterey Jack cheese

* instructions:

The first step:
Preheat oven to 375*, lightly spray a 9x9 baking tray
Using a large bowl, combine ground beef, onion, BBQ sauce, breadcrumbs, eggs, and spices.
The second step:
Press the meat mixture into the bottom of the sprayed tray
Bake without a lid for 20 minutes
Third step:
Remove from the oven and carefully drain the grease
In another bowl, make the instant potatoes and mix them with the evaporated milk, cheese, dried onions, butter and bacon.
The fourth step:
Spread the potato mixture over the meat and sprinkle with grated cheese, bacon and dried onions.
Place under the grill, 6 inches from the grill, and roast for 3 minutes.
Fifth step:
Serve with an extra serving of BBQ sauce if you like.
