+Bread Ingredients:
°2 cups all-purpose flour
°1 teaspoon baking soda
°1/2 teaspoon baking powder
°1 c (2 sticks) soft butter
°1 1/2 c granulat sugar
°1/2 c brown sugar
 °2 teaspoons of vanilla extract
°1/2 teaspoon almond extract
°5 eggs
°1 cup of milk
°14 ounces shredded coconut
°1 1/2 cups toasted pecans
+Freezing Ingredients:
°2 types of cream cheese, 8 oz. All, relaxed
°1 cup (2 sticks) softened butter
°2 pounds of powdered sugar
°2 teaspoons of vanilla extract
°1/2 teaspoon almond extract
°1/2 cup shredded coconut
°1/2 cup toasted walnuts

* Preparation:

The oven is heated to 180 ° C. Prepare 3 round cake pans each 9 inches long by applying vegetable shortening, butter, or cooking spray and flouring, making sure they are well covered to prevent cake from sticking and set them aside.   

Mixing baking powder, flour also baking soda. In the bowl of an electric mixer, beat the softened butter, granulated sugar, brown sugar, vanilla extract, and almond extract together until mixture is light beige and creamy, about 3 to 4 minutes.   Beat the eggs, one at a time, beating well after each addition. 

Then add the dry ingredients: flour, baking soda, and baking powder with milk alternately. Whisk until the ingredients are completely mixed.

Then in a small bowl, mix half of the shredded coconut with 1 cup of the walnuts using a spoon or spatula.
Divide the dough mixture into three equal parts and place them in previously greased and floured molds. Bake for about 25 to 30 minutes or until a toothpick inserted in the center of the bread comes out clean. Then put it to cool completely on a cooling rack.
To make decorations:
Beat cream cheese and butter together until mixture is light, fluffy and golden yellow. Then add the vanilla and gradually, add the powdered sugar little by little, beating until the mixture is smooth and creamy.
Put the loaves on a plate, and between each loaf we put the decorations as a filling, arrange them so that the layers are well balanced, put the frosting on the top and sides and sprinkle them from the top after placing the decorations with walnuts.   We put golden coconut and some walnuts, and so we finish decorating the Italian cream cake.

+To prepare the curd:
°1 cup milk
°4 1/2 tsp fresh lemon juice.

It is easy to prepare. Just add the lemon juice to the milk, stir it with a spoon until it is well incorporated and leave it for about 10 to 15 minutes until it has a consistency where the milk looks like it's lumpy in small granules.   This mixture is yogurt that can last up to a week, adequately refrigerated and covered.
