Lemon Blueberry Bread

*ingredients :

° 1 cup plus 1 tablespoon all-purpose flour
° 2 teaspoons baking powder
° 3 large eggs
° 1 cup granulated sugar
° 1 cup plain yogurt or sour cream
° Half a teaspoon of salt
° Half a teaspoon of vanilla
° Half a cup of vegetable oil
° 2 teaspoons lemon zest
° 1 1/2 cups fresh or frozen blueberries
° Lemon Glaze / Syrup:
° 2 to 3 tablespoons lemon juice
° 1 cup sifted confectioners' sugar

* instructions :

The first step:
Preheat oven to 350*
Grease the sides and bottom of the loaf pan
The second step:
Sift all dry ingredients for baking
In a large bowl, mix all wet ingredients together
Third step:
Slowly add the dry ingredients
In a separate bowl, add 1 tablespoon of the flour to the blueberries and gently stir in the mixture
The fourth step:
Pour the mixture into the prepared pan
Bake for 50 to 55 minutes. If a toothpick comes out clean, the bread is ready
Fifth step:
Take it out of the oven and let it cool for 10 minutes
Remove loaf from pan and allow to cool on cooling rack
Sixth step:
In a small saucepan over low heat, add the powdered sugar to the lemon juice and let it dissolve. Simmer for 3 minutes
Using a toothpick, poke holes all over the loaf, and from the top and sides
Seventh step:
Use a pastry brush to brush the lemon syrup over the top and sides.
Leave it for 15 minutes before serving
