Minced Beef Casserole


Olive oil spray for frying
2 pounds lean ground beef (93�t-free)
1 teaspoon fine sea salt
Half a teaspoon of black pepper
2 teaspoons garlic powder
1 teaspoon onion powder
1/4 teaspoon cayenne pepper
4 oz cream cheese, cubed
1 cup shredded cheddar cheese, divided
2 tablespoons chopped parsley, for garnish

Preheat oven to 400°F. Lightly spraying 2-quart casserole plate with olive oil and set apart. Heat a large non-stick skillet over medium-high heat. Sprinkle it lightly with olive oil. Add ling minc meat to skillet. Cook, stirring and breaking the meat into small pieces, for about 5 minutes, until the raw is just browned. Drain the beef if desired (I skip this step sometimes) and return to the skillet. Reduce the heat to medium. Mix salt, pepper, garlic powder, onion powder, and cayenne pepper into the beef, then slowly and patiently mix in the cream cheese until completely melted and incorporated. Turn off the heat and mix half a cup of shredded cheddar cheese with the beef mixture. Transfer the mixture to a 2-liter casserole dish. Sprinkle the remaining half a cup of cheddar on top. Bake the ground beef casserole until the cheese has melted, about 10 minutes. Garnishing with parsley and serving
