°2 lbs chicken, cooked and cubed
°1 can (10 oz) rotini noodles
°7-8 slices of bacon cooked and chopped
°3 garlic cloves, minced
°2 tablespoons of flour
°1 cup milk (I used 2%)
°3/4 cup ranch dressing (I used Kraft)
°3 tablespoons of butter
°2 cups Mexican cheese blend
°1 can Green Chile

* Methods :

Cook your chicken carefully, I threw it in oven covered  at 375 for 44 min, but  will vary depend on the size / thick your chicken.
During the last 10 minutes of cooking the chicken, prepare your bacon and prepare the noodles according to package directions. Set both aside when done. Oh, and chop your bacon.

Cut your chicken into pieces. Finely chop your garlic cloves.
Preheat oven to 350.

Keep some of your cooking juices in the pan. Cook the garlic cloves and butter until melted (do not brown). Add the chicken and the flour and cook for about 1 minute, mixing everything together. Dump in the milk and the ranch. Stir over medium/low heat for about 2-3 minutes until the mixture thickens slightly.

Add 1 cup of cheese. Mix everything well together. Then add it to the noodles. Mix everything together. At this point you can add the green chilli - I actually used half a can of green chilli as I made half the casserole with the green chilli and half without.
Place the casserole in a large gratin dish. Pour the remaining cup of cheese on top of the casserole. Bake for 15 minutes at 350 until the cheese is melted. Enjoy! We took it with salad. So good!

Enjoy !
