Peach cobbler pies


+To prepare the cake:
°1 1/4 cup all-purpose flour
°1 1/2 teaspoons baking powder
°1/2 teaspoon salt
°2/3 cup white sugar
°1 cup chopped fresh (or canned) peaches
°1/2 cup full fat milk
°1 egg
°1/4 cup vegetable oil
°1 teaspoon vanilla
+To top the streusel:
°1/4 cup all-purpose flour
°3 tablespoons white sugar
°1/2 teaspoon baking powder
°1/2 teaspoon cinnamon
°4 tablespoons cold unsalted butter


+To prepare the cake:
1- Preheat oven to 350°F and prepare a large muffin tin with 12 muffin cups.
2- Add the flour, baking powder, salt and sugar in a large bowl and whisk together.
3- Add the peaches and stir well until covered.
4- Add the milk, eggs and oil and stir with a rubber spatula until the flour disappears.
5- Divide batter evenly into muffin cups (about 3/4 full).
To take first place:
1 - Mix the flour, sugar, cinnamon and baking powder in a small bowl and stir.
2- Add the cold butter in pieces and cut it with your fingers into the flour mixture until it resembles coarse crumbs.
3- Place a spoonful of streusel over the muffin.
4- Bake at 350°F for 20 minutes until golden brown
